I honestly cannot recommend giving it a try enough. Rather than being left behind I def view it the other way, holding onto something is more real than holding a touch controller pretending to touch something else for me. For sure trying to use a yoke with zero feedback is totally immersion breaking for me. As I say you'll find the majority of VR users by quite the margin use it this way the same as sim racing, we all use a wheel still just VR is used for the viewing.
If you want to use it your way I recommend the full VR experiences like the games/sims; VTOL and the Flyinside simulation.

As I say, X-Plane works perfectly in this manner. The "feel" comes from the exquisite level of control without having a spring and a centre spot. Feels more real than any joystick or yoke I've used.
