Trim will vary a bit depending on gross weight and configuration. For a civilian Mustang most pilots will use 6-0-0 meaning 6 degrees right rudder trim, 0 aileron trim and 0 elevator trim.
Naturally for a military 51 the GW will be a bit higher so you might want to have a bit of positive elevator trim cranked in. Ailerons are usually left at 0.

Actually, iirc it doesn't trim you for takeoff, it trims you out for the first power reduction just AFTER takeoff (METO if I remember correctly), so you will still have to steer the aircraft DURING takeoff
