Bear in mind some aspects of the flight model operate outside of FSX Andy, so having sliders full left won't disable all the realistic handling.

One thing you don't mention is the weather. What are the surface winds like when you're experiencing this, and in particular is there a crosswind?

Whilst I'm getting used to things I just use clear weather no wind.
I'm actually practicing and practicing smooth take offs using right rudder to counteract the torque and I'm getting much better. It's not easy with a 15 year old gaming joystick and no rudder pedals!

Sounds like a good plan Andy: both the windless conditions and the constant practice. A twisty handle stick probably does make things a bit trickier than if you're using rudder pedals but the same principals apply. Not sure how your controller sensitivities are set, but this post may be worth a look too.
